GLOSSARY OF TERMS:
Bratwurst Sausage: l inks made from ground veal, pork, and spices
Debrezina Sausage: slender links made from ground pork, spices and smoked
Espagnole Sauce: Espagnole is a classic brown sauce, made from brown beef stock, vegetables and tomatoes, and thickened with a dark roux
Goulash: beef sirloin stew in spicy Hungarian paprika sauce
Knockwurst Sausage: links made from ground beef and spices
Rouladen: thinly sliced beef sirloin stuffed with onions, pickles, potatoes and bacon and braised in a beef stock until tender and topped with espagnole gravy
Sauerbraten: beef roast soaked in a tangy marinade of vinegar, bay leaves, juniper berries, cloves and red wine and braised slowly until tender
Spätzle: German style noodles made from eggs and flour
